PECULIARITIES OF PROTEIN CONTENT OF COLOSTRUMS AND MILK IN CATTLE AND PIG

The ratio of protein fraction of colostrums and milk was studied in cattle of the Kholmo-gorskaya and Holshein dairy breeds and Tatarstan type, and also in the pigs of the Large White breed. It was shown, that colostrums and milk contain the identical proteins, but their contents are different. The change of colostrums protein composition during switch to milk is essential and species-specific: in the cattle the reduction of protein content in milk due to only serum proteins, in the pigs — both serum proteins and caseins.
