BIOCHEMICAL CONTENT OF EBONY FRUITS, GROWING IN DAGESTAN, AND ITS CHANGES DURING COLD KEEPING

The authors determined the content of sugars, titratable acids, pectin and tannin, vitamin C, macro- and microelements in fruits of the ebony (Diospyros kaki L.) of the Zendzhi-Maru, Khiakume and Khachia, growing in Dagestan conditions. The effect of quick freezing (-30 °С) and long cold keeping (-18 °С) on biochemical content of fruits was studied. The used technological modes permit to preserve in an ebony fruits the considerable supply of chemical compounds, which are responsible for nourishing and pharmacological value. The quick freezing fruits of ebony can be successfully used for the obtaining of new food of functional orientation.
