QUALITY METRICS OF PORK AS RESULT OF ADDITION TO RATION OF BIOACTIVE COMPOUND OF SELENOPYRAN

On pigs of the Big White breed the authors studied a selenium distribution in organs and tissues, fatty-acid content of slab bacon and lipids of muscular tissue, the area of muscular ocellus and the thickness of slab bacon were determined. It was established, that an addition to the feeding pigs ration of selenium compounds in dose of 0.3 mg/kg of feed promotes to increasing of biological value of meat and meat foods. On the block of obtained results the organic form of selenium — se-lenopyran — achieves the most effect.
