FEATURES OF MILK PROTEIN CONTENT IN MAIN SPECIES OF AGRICULTURAL ANIMALS

With the use of modern electrophoresis method the authors made the comparative analysis of protein content in milk of cows, sheep, horses and pigs. It was shown, that the milk from different species of farm animals contains identical protein fractions with the exception of two globulin (Gl1, Gl2), find only in horse’s milk, and immunoglobulin (Ig1, Ig2) — in pig’s milk. The significant specific differences of protein content in milk are the result of substantially varied quantitative content of protein fractions, their ratio and the features of protein structure.
