PUROINDOLINES AND PROSPECTS OF SELECTION OF SOFT WHEAT ON QUALITY AND RESISTANCE (review)

A.G. Khakimova, O.P. Mitrofanova

The results of molecular-genetic investigation of seed endosperm texture in soft wheat are discussed. The authors consider the biochemical characteristics of puroindolines — one of main lipoproteid family, determining the differences in endosperm texture, the genetic control of these proteins and geographic expansion of genes alleles. The prospects are discussed the usage of genetic variability of puroindolines in selection for improvement of flour-grinding, bread-making and confectionary properties of corn, the improvement of quality of the fodder and the increase of plant resistance to pathogens.

Key words: common wheat, puroindolines, hardness/softness, grain quality.
